Here's a simple recipe for preparing Ladies Finger Masala:
Ingredients:
- 250g ladies finger (okra), washed, dried, and chopped into 1-inch pieces
- 2 tablespoons oil (vegetable or any cooking oil of your choice)
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 1 green chili, finely chopped (adjust according to your spice preference)
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
1. Heat oil in a pan over medium heat. Add chopped onions and saute until they turn translucent.
2. Add ginger-garlic paste and green chili. Saute for a minute until the raw smell disappears.
3. Add chopped tomatoes and cook until they turn soft and mushy.
4. Now, add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well and cook for a couple of minutes until the spices are well combined and the oil starts to separate from the masala.
5. Add chopped ladies finger (okra) to the pan and mix until the masala coats the okra pieces evenly.
6. Cover the pan and cook on low to medium heat for about 10-15 minutes, stirring occasionally, until the okra is cooked through and tender.
7. Once the okra is cooked, garnish with freshly chopped coriander leaves.
8. Serve hot with roti, chapati, naan, or rice.
